The "Gambero" of Calvisano has existed for more than 250 years.
Born as an Hotel with an adjoining Stallaggio, it offered those savory and full-bodied dishes, as is the tradition of Brescia cuisine and still in the village there is no memory, in the stories of the old, of dinners and snacks consumed next to the fireplace.
But it was my parents who initiated that process of rethinking the flavors of tradition that made the dishes of his cuisine known all the way to the city.
For over 250 years my family has been running the "Shrimp", now it's my turn, with my mother always in the kitchen and with my wife who has also learned to love this profession.
