The history of the restaurant coincides with the history of the Tonola family, with the grandfather returning to Italy after emigrating to Switzerland to take over a small trout farm, fed by the crystalline waters of the stream that runs alongside S. Barnaba. The farm produces very popular trout and what was originally a small trout kiosk becomes a reference for designer cuisine.
